Oh yes dear folks, today is pancake day! Admittedly it seems a bit far-fetched – but hey, who are we to turn down a nice stack of pancakes. To keep it healthy and special we want to share this delicious pancake┬árecipe with a nutritious blend of flaxseed, cocoa and berries: a source of the Antioxidant nutrients Zinc, Selenium and Vitamin E, which can help protect against excess free radicals that can damage cells and tissues in the body.

  • 1 Organic Egg
  • 2 Dessertspoons of Linwoods Milled Flaxseed, Cocoa & Berries
  • 55g Plain Flour
  • 150ml Organic Milk
  • Pinch of Salt
  • 300ml Fresh Organic Orange Juice
  • 2 Tablespoons of Organic Honey
  • Fresh Organic Raspberries
  • Icing Sugar to Dust

Method:

  1. Sieve the flour and salt into a bowl and mix in the Linwoods Milled Flaxseed, Cocoa & Berries.
  2. Make a well in the centre and add the egg.
  3. Slowly whisk in the milk to form a smooth batter.
  4. Heat a little oil in a non-stick pan.
  5. Pour in enough batter to coat the bottom of the pan and cook for 1 minute.
  6. Flip the pancake over and cook on the other side.
  7. Remove from the pan and place on a plate.
  8. Pour the orange juice into a frying pan with the honey and heat gently.
  9. Fold the pancakes into triangles and return to the pan for a few seconds.
  10. Transfer to a serving plate, top with raspberries and dust with icing sugar to serve.
